Pasta with Sweet Pepper cream sauce
4 sweet peppers, chopped
1 onion, chopped
2 c dry pasta, cooked
2 T butter
3T flour
1 c milk
salt and pepper
1/2 c parmesan or swiss cheese, shredded
about 12 shrimp, cooked and peeled
Heat a skillet to medium with vegetable oil and add peppers and onions (plus other veggies if you like!). Cook until vegetables are just tender and transfer to a bowl.
Reheat skillet over medium-low and melt butter in pan. With a whisk, grandually add flour to butter and stir constantly to make a roux. Add more flour to soak up all butter and cook slowly until mixture is light brown.
Add milk to roux and whisk together thoroughly. Then add the cooked vegetables, cheese, salt and pepper to taste. Continue stirring as the sauce thickens around the vegetables and cook a few minutes longer to allow flavors to meld. Serve over pasta with cooked shrimp on top!
