This time of year it’s nice to have a simple appetizer recipe that you can quickly prepare for a holiday party or to enjoy while visiting with friends. And with only three igredients they are simple to make and enjoy. Many farmers have returned from the processor with freezers full of pork sausage from the fall harvest. A sage and sugar breakfast sausage is the classic flavor to be used with this recipe but try italian or hot sasuage for different taste. Using a premixed biscuit mix makes preparation much quicker but I’ve also made these with flour, butter, lard and baking soda when I didn’t have the pre-made mix on hand. This year I substituted Bob’s Red Mill gluten-free biscuit mix so everyone could enjoy these goodies. Dipping in local honey, apple butter or preserves is a great way to highlight more local produce with this holiday appetizer.
Sausage Balls
one pound pork sausage, any variety
2 cups biscuit flour mix
3 cups shredded sharp cheddar cheese
Preheat oven to 375 degrees. Mix all ingredients in a bowl with your hands. Roll into one inch balls and cook on a cookie sheet for 35 minutes or until the sausage is cooked through.
These treats are great dipped in local honey!
